21 Day Fix Container Equivalents:
- 1 green (cauliflower, onion)
- 1 red (shrimp, bacon, yogurt)
- 1/2 yellow (corn, almond milk)
- 1/2 blue (cheese)
- 2 heads of cauliflower
- 2 tsp minced garlic
- 1/2 onion, chopped
- 2 cups low sodium chicken broth
- 1/2 cup plain Greek yogurt
- 3/4 cup shredded cheddar cheese
- 1/2 cup unsweetened almond milk
- 1 cup frozen sweet corn
- 3 cups cooked, peeled shrimp
- 2 slices cooked turkey bacon
Directions:
- Place cauliflower, garlic, onion, and chicken broth in slow cooker for 4 hours on high or 8 hours on low
- Remove cauliflower and blend in blender until smooth, put back into slow cooker
- Put corn in microwave safe dish, add 1 tbsp water, and microwave for 1.5 min or until warm
- Add corn, yogurt, cheese, milk, and shrimp to slow cooker until warm through
- Serve soup and top with turkey bacon crumbles
